John fulfilled one of his long-held ambitions and got to create bespoke playlists for a fine dining restaurant. Devised by head chef Kevin Murphy, Ida’s restaurant in Dingle held a series of secret menu evenings where diners didn’t know what was on their plate or in their glass before booking their table. As a celebration of fine food and delicious natural wines, music played an important role in creating the right atmosphere.
